Most likely, the origin of this lore stems from the musings of merchants and/or bankers about farmers or ranchers who came to town with manure on their boots in contrast with the polished shoes they wore. It could have been said in jest but, more likely, stated derisively: "Looks like he doesn't know the difference between shit and Shinola," as an insult to the hayseed.
